This past Sunday my mom made some amazing meatloaf for our family.

It’s seriously the best loaf I have ever eaten.

However, my mom has one fault when it comes to making meatloaf — she makes way more than we can eat!

Reuse Meatloaf in Four Amazing Ways

Leftover Meatloaf Recipe #1: Easy, Hearty Chili

Probably the easiest way to reuse meatloaf is crumbling it up really well and using it in an easy chili recipe. (We have a chicken chili recipe here too that’s ready in MINUTES!)

Meatloaf Chili Recipe

Yields: 8 servings

Ingredients:

4 cups leftover meatloaf, crumbled very fine
2 cups of water
1/4 teaspoon salt
32 oz can of crushed or diced tomatoes

Directions:

Toss all ingredients into large saucepan and bring to a boil. Reduce heat and simmer on low for 15 minutes. If desired, serve with sour cream and shredded cheddar cheese.

Leftover Meatloaf Recipe #2: Shepherd’s Pie

This has always been a great way to reuse mashed potatoes, but now you can reuse your mashed potatoes and meatloaf!

For comfort food fans, this recipe is a must!

Shepherd’s Pie

Yield: 8-10 servings

Ingredients:

4 cups leftover meatloaf, crumbled very fine
6 cups mashed potatoes
6 cups seasoned green beans (salt, pepper and a tablespoon of cooking oil)
2 cups shredded cheddar cheese

Directions:

Preheat oven to 375 degrees Fahrenheit. In a 9×13 pan, place the crumbled meatloaf to create the bottom layer of the shepherds pie. Next, add all the green beans to create the second layer. Then, spread out the mashed potatoes on top to create the third layer. Lastly, top with shredded cheese and bake for 20 minutes. Remove from oven and serve while hot.

Leftover Meatloaf Recipe #3: Quick and Easy Sloppy Joes.

Super quick and easy.

Simple grab your fave can of sloppy joe sauce and substitute the meatloaf of rate amount of ground beef your can suggests to use.

Crumble your meatloaf thoroughly before using and continue as directed on can of sloppy joe sauce.

Reusing meatloaf throughout the week to create baked spaghetti is a fun way to get your family’s Italian cravings satisfied.

Meatloaf Baked Spaghetti

Ingredients:

2 cups meatloaf, finely crumbled
1 15 oz jar of your fave spaghetti sauce
4 ounces of spaghetti, cooked and drained
3 cups shredded mozzarella cheese

Directions:

Preheat oven to 350 degrees Fahrenheit. In medium sauce pan, add crumbled meatloaf and spaghetti sauce. Stir and cook on medium high heat until boiling. Reduce heat and simmer on low for 15 minutes. Now, place cooked spaghetti in the bottom of a 9×13 baking dish. Spoon the meat sauce on top and sprinkle with mozzarella cheese. Bake spaghetti for 20 minutes. Enjoy!
