You sure can!

  • In a large skillet, brown chicken breasts with butter on all sides.
  • Add all ingredients to the slow cooker (except for the topping and sour cream) and stir together.
  • Close the lid and set on high for a total time of 4 hours, or on low for 8 hours.
  • When time is up, remove the chicken and shred with two forks. Return to slow cooker and stir.
  • Add topping and stir in the sour cream. Leaving the slow cooker on high and tilt the lid slightly open for 20-35 minutes. This “browns” the top a little…;0)

What’s the Best Way to Re-Heat This Chicken Casserole Recipe?

To reheat this dish, add 3 tablespoons of sour cream, a few dashes of salt and pepper and pop it back in the oven at 350 for about 15-20 minutes!

Easy chicken casserole is a quick, hearty meal! It's full of flavor and tradition!

Ingredients

  • 4 chicken breasts, boneless and skinless, (quartered)
  • 1/2 cups chicken broth, (or homemade chicken stock)
  • 8 oz sour cream
  • 8 slices Swiss cheese, OR
  • 2 cups mozzarella cheese, (shredded)
  • 15 Ritz crackers, (crushed, or 1 package Stove Top Stuffing Mix)
  • 1/2 cup softened butter or margarine
  • 1/2 cup chopped green onion
  • 2 tablespoons chopped garlic

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large skillet, saute green onion and garlic for one minute in two tablespoons of oil. Add chicken breasts. Do not cook until all the way done. Only cook until both sides are white and the inside is still pink.
  3. Transfer chicken to a 9x13 ungreased baking pan. Arrange breasts in pan so the entire bottom is covered.
  4. Layer chicken breasts with Swiss cheese.
  5. Spread sour cream on top.
  6. Sprinkle crackers or breadcrumbs on top.
  7. Pour chicken broth all over the top of the crackers or stuffing.
  8. Spread the butter on top of the crumbs.
  9. Bake for 30 minutes or until chicken is no longer pink and the topping is golden brown.
