I had to giggle when my five-year-old thought I was super-mom when I changed the color of this cookie icing to baby blue.

He ran and bragged to his siblings, “Hey! Mom just turned the icing BLUE!”

We made these super-easy by using store-bought sugar cookies as our base cookie.

But if you want to go the extra mile, and sometimes we do, you can whip up a batch of soft homemade sugar cookies like these.

Yes, those are waaaaay more useful for cookie decorating than picking your teeth!

Use them to gently move around the edible pearls so you don’t smear your beautiful frosting all over the place.

To make my cookie baking easier I always, always, allllllwaaaaays use parchment paper on top of my cookie sheets.

I just bake and toss those things to keep clean-up a minimum!

Easy Rainbow Sugar Cookies

Easy Rainbow Cookies

Yield: 12 cookies
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Easy rainbow sugar cookies are topped with a super-cute and simple rainbow design using candies and frosting!

Ingredients

  • 1 dozen sugar cookies
  • 1 cup candy coated chocolates
  • 1/2 cup edible white pearls
  • 2 cups frosting
  • blue food coloring

Instructions

  1. Bake sugar cookies according to directions. Let cool.
  2. Add six drops of blue food coloring to frosting. Stir continuously until color is mixed throughout. Add more if needed.
  3. Once cookies are cool, gently pipe or spread on blue frosting.
  4. Gently place candy-coated chocolates onto the cookies in a rainbow pattern --- red, orange, yellow, green and then blue.
  5. Gently press pearls onto the bottom of the cookie to create clouds. Use a toothpick to maneuver these beads without smearing the frosting.
  6. Enjoy!
