Flourless Peanut-butter and Jelly Thumbprint Cookies

ingredients

2 cups peanut butter
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup powdered sugar
2 eggs
4 Tablespoons jam or jelly
1 teaspoon vanilla

directions

Preheat oven to 350 degrees. Line cookie sheet with parchment paper. In large bowl, place all ingredients, except the jam or jelly, and whisk together until fully incorporated. Roll teaspoonfuls of mixture into balls. Place each ball on cookie sheet. Then, use the back of an 1/8 teaspoon measuring spoon to make small indentions to place the jelly. Gently fill with 1/8 teaspoon jelly for each cookie. Bake for 8 minutes and remove from oven. Let cool before serving or handling. Cookies will harden as they cool. Do not over-bake! Yields: 24 cookies
