  1. In a large pot over medium/high heat drizzle some olive oil and sautee the ground beef, cooking and stirring until brown and all the fat/liquid is evaporated—about 15 minutes.
  2. Add the onion and garlic, cook until translucent.
  3. Next add the veggies, and stir again and allow them to cook and break down.
  4. Season with salt, pepper and the Italian seasoning.
  5. Stir in pureed tomatoes and bay leaf.
  6. Lower heat and allow to simmer for 1.5 to 2 hours.
  7. Stir sauce every 20 minutes.
  8. Check salt, add more if needed.
  9. Sauce will thicken as it stands.
  10. Serve over pasta with grated parmesan cheese and a drizzle of your best olive oil.
