Grilled Smothered Reubens

Grilled smothered Reuben sandwiches take your favorite sandwich up a notch with buttery, grilled toast and layers of gorgeous Swiss cheese.

  • 3 tablespoons melted butter
  • 3 slices corned beef
  • 2 slices Swiss cheese
  • 2 tablespoons Thousand Island
  • 2 tablespoons canned sauerkraut
  • 2 slices rye or sourdough bread


  • Brush melted butter on two slices of bread.
  • Grill until golden brown.
  • Spread grilled bread with Thousand Island.
  • Top with saurkraut.
  • Place corned beef on top of saurkraut.
  • Place sliced Swiss on top.
  • Broil open-faced sandwich until cheese is melted -- about three minutes.
  • Remove from oven and top with slice of grilled bread.
  • Enjoy!
