Grilled Smothered Reubens
Grilled smothered Reuben sandwiches take your favorite sandwich up a notch with buttery, grilled toast and layers of gorgeous Swiss cheese.
- 3 tablespoons melted butter
- 3 slices corned beef
- 2 slices Swiss cheese
- 2 tablespoons Thousand Island
- 2 tablespoons canned sauerkraut
- 2 slices rye or sourdough bread
Brush melted butter on two slices of bread.
Grill until golden brown.
Spread grilled bread with Thousand Island.
Top with saurkraut.
Place corned beef on top of saurkraut.
Place sliced Swiss on top.
Broil open-faced sandwich until cheese is melted -- about three minutes.
Remove from oven and top with slice of grilled bread.
