Ingredients
Scale
- ½ cup cooking oil
- 1 cup sugar
- 2 bananas, mashed
- 2 eggs
- ¼ tsp salt
- 1 tsp vanilla
- ½ cup milk
- 1 tsp baking powder
- 1 tsp cardamom
- 2 cup flour
For Streusel Topping
- ¾ cup flour
- ⅓ cup brown sugar
- ¾ stick butter, softened
- ½ tsp cinnamon
Instructions
- Preheat oven to 400°F.
- Grease or spray muffin pans.
- In medium-sized mixing bowl, whisk eggs, oil, bananas, milk and sugar.
- In separate large mixing bowl, mix together all dry ingredients.
- Add the oil and banana mixture to the dry ingredients and mix until all ingredients are incorporated.
- Add vanilla and whisk again. Do not over-mix!
Streusel Topping
- In medium-sized bowl, stir all topping ingredients together until the mixture becomes crumbly.
- Sprinkle streusel on the top of each muffin before placing in oven.
- Bake your muffins in the pre-heated oven on the center rack.
- Remove from oven when muffins are golden brown and pass the toothpick test.
