Ingredients

Scale
  • ½ cup cooking oil
  • 1 cup sugar
  • 2 bananas, mashed
  • 2 eggs
  • ¼ tsp salt
  • 1 tsp vanilla
  • ½ cup milk
  • 1 tsp baking powder
  • 1 tsp cardamom
  • 2 cup flour

For Streusel Topping

  • ¾ cup flour
  • ⅓ cup brown sugar
  • ¾ stick butter, softened
  • ½ tsp cinnamon

Instructions

  1. Preheat oven to 400°F.
  2. Grease or spray muffin pans.
  3. In medium-sized mixing bowl, whisk eggs, oil, bananas, milk and sugar.
  4. In separate large mixing bowl, mix together all dry ingredients.
  5. Add the oil and banana mixture to the dry ingredients and mix until all ingredients are incorporated.
  6. Add vanilla and whisk again. Do not over-mix!

Streusel Topping

  1. In medium-sized bowl, stir all topping ingredients together until the mixture becomes crumbly.
  2. Sprinkle streusel on the top of each muffin before placing in oven.
  3. Bake your muffins in the pre-heated oven on the center rack.
  4. Remove from oven when muffins are golden brown and pass the toothpick test.
