Ingredients

  • 2 cup all purpose flour
  • 6 oz raspberry-flavored jello
  • ¼ cup sugar
  • ½ cup unsalted butter
  • ½ tsp salt
  • 2 tsp baking powder
  • 2 eggs
  • ½ cup buttermilk or sour milk
  • ½ cup chocolate chips
  • ½ cup mixed berries (optional)

Instructions

  1. Preheat oven to 375°F.
  2. Spray, grease or line muffin pans.
  3. In a large bowl, cream together butter, sugar, jello and salt until light and fluffy.
  4. Beat in the eggs one at a time.
  5. In a separate bowl, mix together the flour and baking powder.
  6. Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated (over-mixing creates less airy muffins).
  7. Fold in chocolate chips and mixed berries.
  8. Spoon into muffin cups and bake for 30 minutes or until golden brown.
