- 3-4 tbsp cooking oil
- 4-5 russet potatoes, peeled, and diced.
- 1 or 1½ cup diced onion
- 1 tsp seasoned salt
- dashes of black pepper
- 4 cup chicken broth
- 4 cup whole milk
- 1 tsp paprika
- 1 tsp parsley
- 8 oz cream cheese, softened and cubed
- chopped green onion for garnish
- 2½ -3 cup Eckrich Original Skinless Smoked Sausage Rope
Instructions
- In a large sauce pan, heat oil over medium heat and add diced potatoes, spices and onions.
- Saute until soft.
- Add diced smoked sausage and cook for 1-2 minutes on medium heat.
- Drain any excess oil.
- Add chicken broth, milk and cream cheese to pot and stir and whisk over medium heat until hot, bubbly and smooth. Whisk throughout to ensure soup is super creamy! Think, mashed potato soup!
- Add additional salt and pepper if desired.
- Remove from heat, garnish with green onions and serve!
