- 4 chicken breasts, boneless and skinless, (quartered)
- ½ cup chicken broth, (or homemade chicken stock)
- 8 oz sour cream
- 8 slices Swiss cheese, OR
- 2 cup mozzarella cheese, (shredded)
- 15 Ritz crackers, (crushed, or 1 pkg Stove Top Stuffing Mix)
- ½ cup softened butter or margarine
- ½ cup chopped green onion
- 2 tbsp chopped garlic
Instructions
- Preheat oven to 350°F.
- In a large skillet, saute green onion and garlic for one minute in two tablespoons of oil. Add chicken breasts. Do not cook until all the way done. Only cook until both sides are white and the inside is still pink.
- Transfer chicken to a 9×13 ungreased baking pan. Arrange breasts in pan so the entire bottom is covered.
- Layer chicken breasts with Swiss cheese.
- Spread sour cream on top.
- Sprinkle crackers or breadcrumbs on top.
- Pour chicken broth all over the top of the crackers or stuffing.
- Spread the butter on top of the crumbs.
- Bake for 30 minutes or until chicken is no longer pink and the topping is golden brown.
