This cucumber, tomato and basil salad is a fresh, simple side dish that comes together in just minutes. Ingredients

Scale
  • 1 cup diced mozzarella cheese
  • 3 cup diced cucumbers (I prefer Japanese cucumbers…they have less seeds)
  • 3 cup diced tomatoes
  • 1 large onion, diced
  • 1 bottle balsamic dressing (8 oz)
  • 1 tbsp fresh basil, chopped

Optional, But Highly Recommended Ingredients

  • 1 cup chopped walnuts (optional)
  • 1 cup black olives, sliced (optional)

Instructions

  1. In medium-sized mixing or serving bowl, place all ingredients and lightly toss until thoroughly incorporated.
  2. Garnish with fresh basil leaves.
  3. If you want to be REALLY bad, throw some grated parmesan cheese on top before chowing down.
  4. Don’t worry, you can feel good about it because you’re eating your veggies and your plate is colorful!
