- 1 large onion
- 2 tbsp butter
- 2 cup beef broth
- 1 cup low sodium chicken broth
- 1 cup Gruyere cheese, shredded
- several slices of thick french bread or baguette
Instructions
- Thinly slice the onion.
- Add butter to medium sauce pan and saute the onions on medium-low heat until clear and translucent, stirring continuously.
- Add in chicken broth and bring to a boil.
- Stir in beef broth, cover and simmer for 20 minutes.
- Using a heart-shaped cookie cutter, cut bread into heart shapes and set aside.
- Once soup is finished simmering, place in oven-proof serving bowls.
- Place heart-shaped bread pieces over soup and sprinkled with shredded cheese.
- Broil in oven just until lightly brown — approximately 3 minutes.
