Ingredients

  • 3 Bananas, mashed
  • ½ cup oil (use a little less if your peanut butter is extra oily)
  • ½ cup evaporated milk
  • 1 cup rice flour
  • ¼ cup tapioca flour
  • ¼ cup potato starch
  • ½ cup crunchy peanut butter
  • 1 tbsp gluten-free baking powder (many are gluten free, double check the label or stick with a brand you trust)
  • 2 eggs
  • ½ tsp salt
  • ½ cup brown sugar
  • ¼ cup white sugar
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350°F.
  2. In medium-sized mixing bowl, stir all dry ingredients, except the sugars, and set aside.
  3. In large mixing bowl, add the bananas, oil, peanut butter, eggs and sugars.
  4. Mix with blender until smooth.
  5. Then, add the dry ingredients and mix just until moistened.
  6. Now, pour in the milk and vanilla.
  7. Mix for 30 seconds, or until all ingredients are thoroughly combined.
  8. Pour into greased pan that has been lightly floured with rice flour.
  9. Bake for 50 minutes and let cool about 30 minutes before cutting.
