Grinch Pancakes

These Grinch pancakes are fluffy, bright green, and topped with a cloud of whipped cream and a single heart sprinkle. A fun, festive Christmas breakfast that turns an ordinary morning into a holiday treat.

Ingredients

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 4 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1¾ cups milk
  • ¼ cup butter
  • 2 tsp vanilla extract
  • 1 large egg
  • Neon green gel food coloring
  • Optional toppings: whipped cream or Cool Whip, jumbo heart sprinkles

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Melt the butter in the microwave in 30-second increments, then give it a minute to cool.
  3. Make a well in the flour mixture and add the egg. Give it a whisk without mixing it into the flour.
  4. Add the milk, melted butter, vanilla, and a generous amount of green gel food coloring, about 2 tsp. Whisk just a bit, then fold the batter together with a spatula. A few lumps are fine.
  5. Let the batter rest for about 5 minutes.
  6. Heat a large skillet over medium-high heat and spray with nonstick spray.
  7. Add about ¼ cup of batter per pancake. (A large skillet fits about 3 at a time; a griddle will make more at once.)
  8. Cook 2–3 minutes, until the sides start to look fluffy and the top is bubbly. Flip.
  9. Cook 2–3 minutes more on the other side.
  10. Repeat until all the pancakes are made.
  11. Stack the pancakes and add your favorite toppings.

Notes

  • Use gel food coloring rather than liquid. Gel gives a vibrant color without thinning the batter.
