Ingredients

  • 2 cup peanut butter
  • ½ cup brown sugar
  • ½ cup white sugar
  • ½ cup powdered sugar
  • 2 eggs
  • 4 tbsp jam or jelly
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350°F.
  2. Line cookie sheet with parchment paper.
  3. In large bowl, place all ingredients, except the jam or jelly, and whisk together until fully incorporated.
  4. Roll teaspoonfuls of mixture into balls.
  5. Place each ball on cookie sheet.
  6. Then, use the back of an ⅛ tsp measuring spoon to make small indentations to place the jelly.
  7. Gently fill with ⅛ tsp jelly for each cookie.
  8. Bake for 8 minutes and remove from oven.
  9. Let cool before serving or handling.
  10. Cookies will harden as they cool.
  11. Do not over-bake!
