- 2 cup peanut butter
- ½ cup brown sugar
- ½ cup white sugar
- ½ cup powdered sugar
- 2 eggs
- 4 tbsp jam or jelly
- 1 tsp vanilla
Instructions
- Preheat oven to 350°F.
- Line cookie sheet with parchment paper.
- In large bowl, place all ingredients, except the jam or jelly, and whisk together until fully incorporated.
- Roll teaspoonfuls of mixture into balls.
- Place each ball on cookie sheet.
- Then, use the back of an ⅛ tsp measuring spoon to make small indentations to place the jelly.
- Gently fill with ⅛ tsp jelly for each cookie.
- Bake for 8 minutes and remove from oven.
- Let cool before serving or handling.
- Cookies will harden as they cool.
- Do not over-bake!
