For the muffins

  • 2 cup flour
  • 1 tbsp + 1 tsp baking powder
  • 2 tsp pie spice
  • ½ tsp salt
  • 1 cup buttermilk
  • 2 eggs
  • ¼ cup vegetable oil
  • 2 tbsp maple syrup
  • ½ cup brown sugar, packed
  • 1 cored apple, grated
  • ½ cup oats

For the glaze (optional)

  • 1 cup powdered sugar, sifted
  • 2-3 tsp milk
  • ¼ tsp vanilla
  • ½ tsp ground cinnamon

Instructions

  1. Preheat oven to 375°F.
  2. Grease or line a 12-cup muffin tin.
  3. In a large mixing bowl, whisk together the flour, baking powder, pie spice, and salt.
  4. Add buttermilk, eggs, oil, maple syrup, and brown sugar.
  5. Whisk until combined.
  6. Fold in grated apple.
  7. Stir in the oats.
  8. Fill muffin tins ¾ of the way full with the muffin batter, then bake for 15-20 minutes.
  9. Remove muffins from the oven and allow to cool.
  10. While moffuins are cooling, whisk together powdered sugar, milk, and cinnamon until smooth.
  11. Drizzle this glaze over the muffins and serve.

Notes

To freeze muffins, allow muffins to cool completely. Then, feeze for 30 minutes on a cookie sheet. Once frozen, place muffins in freezer bags and store up to 3 months!
