FUn and Easy Rainbow Trail Mix

I have to admit, I myself am not a trail mix lover, but my kids are (aren’t all kids?). I thought it would be fun for them to celebrate St. Patrick’s Day with some End of the Rainbow Trail mix. I love giving them something to snack on throughout the day instead of just focusing on one big treat at the end of the day!

One of the reasons I’m not all that into trail mix is because usually the stuff you can buy from the store that is already pre-made only has one or two mix-ins I actually like — and then I’m picking through everything for those ingredients (and leaving the rest.) All the leftover, non-wanted food eventually gets tossed into the garbage! But that is the beauty of making your own! Add all the things you love, and then mix it together. Voila! Instantly you have a snack you are guaranteed to eat and not waste.

My kids are big Lucky Charms fans, so I knew between the cereal and marshmallow candies, peanuts, and tropical dried fruit, I had a winner on my hands! No need to pick out all the not-so-yummy ingredients!

Serving the trail mix in cute little St. Patrick’s Day cupcake liners makes the snack really festive — plus the kids will feel pretty special eating out of a super-cute bowl. Did I mention no cleanup? This End of the Rainbow Trail Mix is the perfect little afternoon snack to keep their hunger at bay until dinner time and to make the day seem a bit more festive!

Ingredients

Scale
  • 1 cup Lucky Charms Cereal
  • 1 cup Lucky Charms Marshmallow Candies
  • 1 cup Peanuts
  • 1 cup Tropical Dried Fruit
  • St. Patrick’s Day cupcake liners, optional

Instructions

  1. Combine all ingredients into a large bowl and mix until everything is evenly distributed.
  2. Fill each cupcake liner with trail mix.
  3. Leftover trail mix should be stored in an airtight container, like a Ziplock bag.
