Easy chocolate chip pumpkin muffins made with a cake mix shortcut! Moist, sweet, and the perfect grab-and-go fall breakfast or snack!

Ingredients

Scale
  • 1 box carrot cake mix, 18.25 oz
  • 1 egg
  • 15 oz pumpkin puree
  • 1 cup chocolate chips
  • 2 tbsp margarine

Instructions

  1. Preheat oven to 375°F.
  2. In large mixing bowl, beat together the cake mix, egg, pumpkin and margarine. Beat for three minutes.
  3. Fold in chocolate chips.
  4. Spoon muffin batter into parchment lined of lightly greased muffin cups. Batter will be thick.
  5. Bake for 20 minutes nad remove from oven.
  6. Once slightly cooled, gently remove muffins from pan using a butter knife to keep edges from sticking.
  7. Enjoy!
