Ingredients

- 4 cup tater tots
- 1 lb ground beef
- 1 envelope taco seasoning
- 1 15 oz can diced tomatoes
- 1 large onion, diced
- ¼ tsp salt
- 2 tbsp cooking oil
- 2 tbsp fresh cilantro
- 1 cup shredded cheddar cheese
- lettuce, olives and sour cream — optional
Instructions
- Preheat oven to 400°F.
- Once heated, place tater tots on an ungreased cookie sheet and bake until golden brown and slightly crunchy.
- Next, brown beef and add taco seasoning and water according to package directions.
- Cook according to packaged directions.
- While taco meat is cooking, saute tomatoes and onions in 2 tbsp oil in large skillet.
- Cook until onions are tender.
- Stir in fresh cilantro.
- Now, remove baked tater tots from oven and top with ground beef mixture.
- Pour onions and tomatoes on top, then top with cheddar cheese.
- Return to oven for just a few minutes to melt the cheese.
- Then, top with additional toppings before serving.
Notes
You can substitute jarred salsa for sauteed onions and tomatoes, if desired.
