Loaded tater tot nachos piled with seasoned beef, melty cheese, and all the fixings! A fun, hearty snack that’s perfect for game day!

Ingredients

  • 4 cup tater tots
  • 1 lb ground beef
  • 1 envelope taco seasoning
  • 1 15 oz can diced tomatoes
  • 1 large onion, diced
  • ¼ tsp salt
  • 2 tbsp cooking oil
  • 2 tbsp fresh cilantro
  • 1 cup shredded cheddar cheese
  • lettuce, olives and sour cream — optional

Instructions

  1. Preheat oven to 400°F.
  2. Once heated, place tater tots on an ungreased cookie sheet and bake until golden brown and slightly crunchy.
  3. Next, brown beef and add taco seasoning and water according to package directions.
  4. Cook according to packaged directions.
  5. While taco meat is cooking, saute tomatoes and onions in 2 tbsp oil in large skillet.
  6. Cook until onions are tender.
  7. Stir in fresh cilantro.
  8. Now, remove baked tater tots from oven and top with ground beef mixture.
  9. Pour onions and tomatoes on top, then top with cheddar cheese.
  10. Return to oven for just a few minutes to melt the cheese.
  11. Then, top with additional toppings before serving.

Notes

You can substitute jarred salsa for sauteed onions and tomatoes, if desired.
