Why would I share a man food on a predominantly mom-reader website?
Simply put — most of us cook for men.
There are some single mom readers out there, but most of the readers have a hubby to cook for at home — or at least a son!

This is definitely a kid-friendly recipe too.
All six of my kiddos love, love, LOVE tater tots.
Anytime I pull out the bag of tater tots from the freezer I get several, “Yes! Tater tots!” coming from around the house.
Try them in casseroles, smush them up for easy hash-browns, and of course — make some nachos out of them — or totchos, to be exact.
I love tater tot nachos for a selfish reason.
It’s a no-fuss, easy snack or meal.
Seriously, pair it with a fresh salad and I am DONE in the kitchen!
Add some fun with an easy dessert and I have serve my family a hearty main dish, side salad with veggies and a dessert to top it off with little time or effort.
There are so many meals that require quite a bit of time and clean-up, so when I find an easy meal like this one, I stick with it.

This recipe is also super-versatile.

Store bought salsa is super expensive here, so I make my own many times.
But, anytime it’s on clearance — I buy it!
Add meat or go meatless, add sour cream or just enjoy it with meat or cheese.

Easy Tater Tot Nachos
Ingredients:
4 cups tater tots
1 pound ground beef
1 envelope taco seasoning
1 15 oz. can diced tomatoes
1 large onion, diced
1/4 teaspoon salt
2 Tablespoons cooking oil
2 Tablespoons fresh cilantro
1 cup shredded cheddar cheese
lettuce, olives and sour cream — optional
Directions:
Preheat oven to 400 degrees Fahrenheit.
Once heated, place tater tots on an ungreased cookie sheet and bake until golden brown and slightly crunchy.
Next, brown beef and add taco seasoning and water according to package directions.
Cook according to packaged directions.
While taco meat is cooking, saute tomatoes and onions in 2 Tablespoons oil in large skillet.
Cook until onions are tender.
Stir in fresh cilantro. Now, remove baked tater tots from oven and top with ground beef mixture. Pour onions and tomatoes on top, then top with cheddar cheese.
Return to oven for just a few minutes to melt the cheese.
Then, top with additional toppings before serving.
You can substitute jarred salsa for sauteed onions and tomatoes, if desired.
Yields: 6 servings.
