Incredibly easy egg cups that are filled with ham, cheese, Southwestern ingredients, spices and baked in a muffin tin! Perfect, super-fast, on-the-go breakfast for busy people!

Ingredients

  • 6 eggs, beaten
  • ¼ cup heavy whipping cream
  • ½ cup onion, chopped
  • 1 cup bell pepper, chopped
  • 1 cup ham pieces, cubed
  • 1 cup cheddar cheese, shredded
  • salt and pepper to taste
  • fresh herbs for garnish, optional

Instructions

  1. Preheat the oven to 400°F.
  2. Press a wonton wrapper into the bottom of each section of a greased muffin pan.
  3. In a mixing bowl, combine the onion, bell pepper and ham cubes.
  4. Stir to combine.
  5. Place a large spoonful of the filling mixture into each of the cups in the muffin pan.
  6. Beat together 6 eggs, and mix in ¼ cup of heavy whipping cream.
  7. Add salt and pepper to taste.
  8. Pour some of the egg mixture into each of the cups.
  9. Bake for 12–15 minutes until cooked through.
  10. Sprinkle some shredded cheddar cheese onto the top of each of the omelette cups.
  11. Garnish with fresh herbs if desired, and serve immediately or follow our freezer directions in the post ad freeze up to three months.
