These soft batch gingersnap cookies were created because everyone should be able to have the perfect cookie — perfectly spiced, but with a soft, chewy texture. Yes, I love gingersnaps, but I want them to be a little less, well, snappy. I wanted the same gingery goodness wrapped in a soft batch cookie. Not to much to ask, right?

Just yesterday our family was enjoying lunch around the table. We were reminiscing about our families and how my husband and I grew up on store-bought or ready-to-bake cookies. We were telling the kids about the prepared refrigerated cookie dough (they never see that in our fridge, so they were completely confused.) Their inquisitive looks finally burst into a question, “Were the cookies good?” My husband quickly answered with a, “The store bought dough is not like your mom’s homemade cookies! Hers are waaaaay better!”

Soft Batch Gingersnap Cookies

The same gingersnap flavor you love all wrapped into a soft batch cookie! Enjoy these perfectly spiced soft batch gingersnap cookies anytime you desire to have the perfect cookie! Don't forget! You can add the homemade lemon glaze on top for a perfectly pretty finish!

Ingredients

  • 2 cups unbleached flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon table salt
  • 1 cup granulated sugar
  • 3/4 cup canola oil
  • 1 large egg
  • 1/4 cups milk flavored molasses

Lemon Glaze

  • 3/4 cup powdered sugar
  • 2-3 tablespoons softened butter
  • 1 teaspoon lemon extract
  • 3 tablespoons fresh squeezed lemon juice or water

Instructions

  1. Preheat oven to 350. Line baking sheet with parchment paper.
  2. In a separate bowl, whisk together first five ingredients.
  3. In a large bowl or mixer beat sugar and oil about 2 minutes, then add egg and molasses.
  4. Gradually stir in flour mixture. Add a couple more tablespoons of flour if needed.
  5. Form cookie by making a ball using about 1 heaping Tablespoon of dough each. Place each cookie about 2 inches apart on cookie sheet.
  6. Bake until cookie is golden brown around edges and cracked on top, about 12 minutes.
  7. Let cool and serve or drizzle with lemon icing.

Lemon Glaze

  1. Mix all ingredients and beat till smooth about 1 minute.
  2. Top cookies with lemon glaze.
