I love me some easy cookie recipes that make little mess in my kitchen. In fact, last Christmas my kids and I made about 40 batches of cake mix cookies for our neighbors. We were on a really tight money and time budget, so cake mix cookies were cheaper and quicker to make. I got loads of compliments and no one knew these cookies came for a cake mix —- tah da!
Did I mention these cookies have pecans in them? Oh, yes. One of my favorite nuts on the planet. Pecans and chocolate should be related. Totally. In fact, I think we need to start a group demanding that pecans are always included with recipes that are chocolate. Not really. Just checking to see if you’re reading anything instead of just drooling over the cookie pics!

Easy Chocolate Pecan Cookies
- 1 box chocolate cake mix
- 1/2 cup butter room temperature
- 1/4 cup cooking oil
- Preheat oven to 350 degrees Fahrenheit.
- In a large mixing bowl, combine eggs, oil and butter with the cake mix. Mix well.
- Using a small scoop or Tablespoon, scoop out one tablespoon of dough per cookie onto a parchment lined cookie sheet.
- With damp or wet fingers, lightly press each cookie to flatten.
- Sprinkle pecans on top of each cookie.
- Bake for 8 minutes for chewier cookies and 10 minutes for crispier cookies.
- Remove from oven and cool before serving.
