I love me some grilled sandwiches — but I especially love them when my oh-so-cute hubby makes them!
Yes, he insisted on making these Reubens for me — who was I to argue?
I loved watching him get the grilled bread to utter perfection before spreading on a glob of mouthwatering Russian or Thousand Island dressing.
There’s just something about my husband cooking for me — just takes romance up a notch!
Then he ever-so-perfectly spooned on the sauerkraut and placed the slices of corned beef gently on top.
It’s really an art when you watch this guy make a sandwich — especially if the grill is involved!
Ingredients Needed for Reuben Sandwich
Reuben Sandwich Ingredient #1: Melted Butter
Using butter instead of oil makes a big difference in flavor!
Reuben Sandwich Ingredient #2: Corned Beef
We don’t use the cheap stuff, so don’t skimp on this ingredient! :)
Reuben Sandwich Ingredient #3: Swiss Cheese
The cheese with all the holes… We prefer full fat Swiss cheese in this recipe.
Reuben Sandwich Ingredient #4: Sour Dough or Rye Bread
Either one is a good choice, though most classic Reubens use Rye.
We’ve used both and love both choices!
Reuben Sandwich Ingredient #5: Russian or Thousand Island Dressing
Depends if you want more sweet or more tangy!
Reuben Sandwich Ingredient #6: Sauerkraut
You can use fresh or canned!
HOW TO MAKE A REUBEN SANDWICH
For this recipe, you’ll need a grill.
If you don’t have a grill, follow the directions but cook on your stove or bake in your oven.

Grilled Smothered Reubens
Grilled smothered Reuben sandwiches take your favorite sandwich up a notch with buttery, grilled toast and layers of gorgeous Swiss cheese.
- 3 tablespoons melted butter
- 3 slices corned beef
- 2 slices Swiss cheese
- 2 tablespoons Thousand Island
- 2 tablespoons canned sauerkraut
- 2 slices rye or sourdough bread
- Brush melted butter on two slices of bread.
- Grill until golden brown.
- Spread grilled bread with Thousand Island.
- Top with saurkraut.
- Place corned beef on top of saurkraut.
- Place sliced Swiss on top.
- Broil open-faced sandwich until cheese is melted -- about three minutes.
- Remove from oven and top with slice of grilled bread.
