Minty coconut hot chocolate is my answer to my chocolate loving soul cravings.
I’m trying to “clean up” some of my favorite recipes.
I love chocolate, coffee and all things cheese. Can I get a witness?
But my body doesn’t thrive on those foods, so I’m trying to “trick” it into thinking it’s still getting all those “feel so good” foods without adding all the ingredients that seem to trip me up on my healthier mom journey.
But we’re a divided family.
Some of our big crew refuse to give up potato chips, fried chicken and rocky road brownies.
And they also love our famous peppermint hot chocolate pie!
And I understand their connection to these foods.
But I’ve discovered that cleaning up my fave recipes makes them fit on my healthier mom menu.
Who knew that coconut milk, almond milk and raw cacao powder could create a chocolate-lovers dreamy cup of hot chocolate…without the guilt?

Stay Patient.
Slowly heat the milk.
But don’t walk away. You never, ever, ever want the milk to boil.
It could curdle — and nobody wants ricotta cheese in their hot chocolate…;0)
And make sure you use the absolute best ingredients.
Not the cheapest version of almond milk available. Naw…go all out.
I prefer Blue Diamond Almond Milk with Vanilla. Unsweetened.
And yes, actually use pure maple syrup. Not Aunt Jemima’s that my kids like to smother their pancakes with..;0)
