If you’re like me, during the summer months you’re taking your kids to the park, library and traveling throughout the week. Super easy meals are a must, aren’t they? That’s why I created a fun and healthy twist to the traditional pasta salad. I added some of my fave fresh ingredients, and also some protein packed tuna to keep me going through the summer!
This recipe is super quick, and tastes better the second day! It’s still great right away, but if you let it sit in the fridge for 24 hours, all the amazing flavors have time to blend and the pasta salad is at the perfect chilly temperature to be devoured.
And you know what? I noticed that if kids see their parents eating certain foods often, they’ll want to at least try them. My kids were begging for my pasta salad — and my husband had to grab some too! Definitely try this pasta dish with your picky eaters — you may be pleasantly surprised at their reactions! My kids find it hard to resist REAL Parmesan cheese! Oh, and this is kind of important too — in each 4 oz serving of Garden Delight pasta, there is one complete serving of veggies! - 2 1/2 cups pasta boiled, drained and rinsed with cold water
- 2 Tablespoons sliced black olives
- 1 T. sun-ripened tomatoes
- 3 T.of shredded Parmesan cheese
- 3 T. crumbled Albacore tuna
- 1 T. freshly minced garlic
- 1 T. freshly minced basil
- 1/2 c. French vinaigrette dressing (you can also use Italian or ranch dressing)
- few dashes of salt
- Combine all ingredients.
- Toss thoroughly.
- Serve immediately or refrigerate for one hour for a chilled pasta salad.
