This is a lazy, homemade egg nog — a recipe that’s so easy you won’t believe it!
I’ve been loving eggnog since I was a little girl.
Boy, was I thrilled when I found this recipe for eggnog bundt cakes.
Almost heaven right there.
So when I discovered an eggnog recipe that was ready in literally minutes and required no cooking, I was all in!
And if you’re a huge eggnog fan, but want a lazy, almost done-for-you recipe, read on, fellow egg nog friend.
Read on.
WHY MAKE EGG NOG WITHOUT EGGS?
Our family moved to SE Asia about ten years ago.
I know you probably could care less, but it does have something to do with this recipe!
In SE Asia, I could not find my favorite holiday drink.
Homemade egg nog sounded amazing, but we don’t drink alcohol.
And apparently, alcohol is what makes egg nog “safe” to drink if you use raw eggs.
And we were not trying the raw egg without alcohol route in Cambodia.
Plus, I have a slight egg allergy. :)
WHY AN EASY EGG NOG?
Because sometimes you need to get an egg nog flavored drink FAST.
And this is probably the fastest recipe on earth for eggless eggnog.
And it’s really good.
Please don’t skip on the whipping cream!
Another American who was living abroad, shared her story of trying to make the perfect cup of egg nog.
The only thing was her recipe required cooking.
But, she said one line that made me think.
Her words were, “It’s basically vanilla pudding that’s watered down and spiced up.”
Whoa…stop the bus.
Could it really be that simple?
INGREDIENTS FOR EASY EGG NOG
Egg Nog Ingredient #1: French vanilla pudding mix
Using French vanilla instead of regular vanilla adds another level of richness that eggless egg nog needs!
Egg Nog Ingredient #2: Whole milk
This keeps this drink rich as well.
I highly recommend not using a lower fat milk unless you have a milk allergy and need to replace this with a nut milk.
Egg Nog Ingredient #3: Whipping cream
You’ll need this for the actual drink and for the topping.
Yes, it’s worth the investment and do not buy the whipped topping yuckiness.
You want real, authentic ingredients for this incredible drink!
Egg Nog Ingredient #4: Granulated Sugar
Because it needs to be sweet!
Egg Nog Ingredient #5: Real Vanilla Extract
There’s a difference between imitation and real.
Invest in the real thing!
Egg Nog Ingredient #6: Spices
This is what every glass of egg nog needs!
Can Homemade Egg Nog Be This Easy?
I ventured to ask my creative friend the burning question on my mind.
“Do you think it would work with instant pudding mix?”
She had no idea, but this busy mom was willing to give it a whirl.
EASY EGG NOG WAS UNBELIEVABLY GOOD!
And that was when life changed for this eggnog fan.
I could barely wait to pour my homemade egg nog over a glass of ice (Because I’m weird and like egg nog with ice.)
I could smell all the familiar flavors I craved during the holidays…
Cinnamon.
Nutmeg.
Vanilla.
In seconds, my kids were racing into the kitchen begging for egg nog.
We all sipped, guzzled and smiled as we wiped our egg nog mustaches.
We should have waited and topped it with homemade whipped cream, but our egg nog addictions overcame us. ;0)
Next, we tried an almond milk version.
Same recipe, just substituted the almond milk for the regular milk.
And we even did a sugar free version by using sugar free instant pudding.
There are so many options!
SPECIAL DIET SUBSTITUTIONS FOR EGG NOG
Sugar free Egg Nog. Use sugar free pudding and replace granulated sugar with Stevia, Equal, or Splenda — to taste.
Dairy Free Egg Nog. Try Hazelnut, Cashew, or almond milk instead of whole milk. Omit the whipping cream slowly add additional milk to he consistency of your liking. Make “whipped cream” from chick peas with this recipe for the topping. Stir a little into finished egg nog to thicken it up a smidge. This version will be slightly thinner due to the absence of whipping cream.
