Ingredients
  

  • 1 jar your favorite salsa
  • 1 pkg taco seasoning
  • 3 cups cheddar cheese shredded
  • 1 cup Monterrey Jack cheese shredded
  • 1 lb ground beef cooked and drained

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit.
  • In medium-sized skillet, combine ground beef and taco seasoning and cook according to package directions for traditional taco meat.
  • In the meantime, cook your lasagna noodles until just past el dente, according to package directions.
  • Drain and rinse the lasagna noodles, then line the bottom of a casserole dish with three (or more as needed).
  • Spread half of the meat mixture over the noodles, then top with 3/4 cup salsa and then 1 cup cheddar cheese. Repeat with a second layer - noodles, meat, salsa, cheese.
  • Top the lasagna with the final 3 lasagna noodles and spread the top with remaining cheddar cheese as well as the Monterrey Jack Cheese.
  • Cover loosely with aluminum foil and bake in oven until cheese is melted, about 20 minutes. Remove the foil the last five minutes if you want a slightly browned and crunchy top.
  • Garnish with tomatoes, sour cream and cilantro, if desired.
