Ingredients

  • 1 jar your favorite salsa
  • 1 pkg taco seasoning
  • 3 cups cheddar cheese, shredded
  • 1 cup Monterrey Jack cheese, shredded
  • 1 lb ground beef, cooked and drained

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In medium-sized skillet, combine ground beef and taco seasoning and cook according to package directions for traditional taco meat.
  3. In the meantime, cook your lasagna noodles until just past el dente, according to package directions.
  4. Drain and rinse the lasagna noodles, then line the bottom of a casserole dish with three (or more as needed).
  5. Spread half of the meat mixture over the noodles, then top with 3/4 cup salsa and then 1 cup cheddar cheese. Repeat with a second layer - noodles, meat, salsa, cheese.
  6. Top the lasagna with the final 3 lasagna noodles and spread the top with remaining cheddar cheese as well as the Monterrey Jack Cheese.
  7. Cover loosely with aluminum foil and bake in oven until cheese is melted, about 20 minutes. Remove the foil the last five minutes if you want a slightly browned and crunchy top.
  8. Garnish with tomatoes, sour cream and cilantro, if desired.
