How to Make Easy Grinch Cupcakes

Preheat and Prep:

Preheat your oven to 350 degrees Fahrenheit and line your cupcake pans with cupcake liners. Set them aside.

Start mixing.

In the bowl of a stand mixer, combine the softened butter and sugar. Cream them together until the mixture becomes smooth.

Add wet ingredients.

To the same bowl, add in the vanilla extract and eggs. Mix until they are well combined, making sure to scrape down the sides of the bowl as needed.

Add dry ingredients.

Next, add in the flour, baking powder, and salt. Mix these dry ingredients thoroughly into the wet mixture.

Greenify the cupcake batter.

Now, it’s time to add some green magic!

Pour in the milk, oil, and a few drops of green food coloring.

Mix very well.

Remember, you can always add more food coloring later if needed.

Start with just a few drops and mix thoroughly between each addition.

Fill the cupcake liners. Using a ¼ cup measuring cup or an ice cream scoop, fill each lined cupcake cavity with enough batter to fill them about ⅔ full.

Bake to perfection.

Pop the cupcakes in the oven and bake for 14-16 minutes.

You’ll know they’re ready when the edges start to turn golden brown, and a toothpick inserted into the center comes out clean.

Set them aside to cool completely before decorating.

How to Make Green Frosting for Grinch Cupcakes

For the frosting, place the softened butter, salt, and vanilla extract in the bowl of your stand mixer.

Mix until well combined.

Gradually add in about half of the powdered sugar and combine.

Then, add the remaining powdered sugar and about two tablespoons of milk.

Mix on low speed until everything comes together.

If the frosting still looks crumbly, add the remaining milk.

Whisk on medium to high speed for about a minute to fluff up the frosting until it’s smooth.

Add green food coloring, just a few drops at a time, and mix well between each addition.

Scrape down the sides and the bottom of the bowl to ensure there are no sneaky white spots.

Transfer your beautifully green frosting to a piping bag fitted with a large star tip (1M).
