Easy Roasted Pumpkin Spice Pumpkin Seeds

Toasted Pumpkin Seeds with Cranberries

Yield: 12 servings

Ingredients

  • 2 tbsp. Olive Oil
  • 1/2 tbsp. Lemon Juice
  • 1 tsp. Sea Salt
  • 1 tsp. Ground Cinnamon
  • 1/2 tsp. Pumpkin Pie Spice
  • 1/4 tsp. Ground Cloves
  • 1 tsp. Fresh Thyme
  • 1 tsp. Fresh Rosemary
  • 1 cup dried cranberries
  • 4 cups pumpkin seeds

Instructions

  1. Preheat oven at 325 degrees.
  2. Combine raw pumpkin seeds, olive oil, lemon juice, sea salt, ground cinnamon, pumpkin pie spice, ground cloves, fresh thyme, and fresh rosemary.
  3. Bake for 20-25 minutes (stirring halfway through).
  4. Stir in dried cranberries.
  5. Bake for 5 minutes. Allow to cool. Serve before meals or as an on-the-go snack.
