Super Soft Pumpkin Chocolate Chip Cookies

Cook Time: 12 minutes
Total Time: 22 minutes

Favorite pumpkin spices and pumpkin are weaved together with tiny bits of chocolate to create a mouthwatering, super-soft, pumpkin chocolate chip cookie! These cookies are perfect for holiday parties or for holiday gifts!

Ingredients

  • 1 cup canned pumpkin
  • 1 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 1 egg, large
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon Pumpkin pie spice
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 cups all purpose flour
  • 1 cup chocolate chips
  • 2 tablespoons chocolate chips, to place on top before baking

Instructions

  1. In a large bowl, mix the pumpkin, granulated sugar, brown sugar, vegetable oil egg, vanilla extract, cinnamon and pumpkin pie spice.
  2. Slowly fold in the flour, baking powder and baking soda.
  3. Fold in one cup chocolate chips.
  4. Cover and chill the dough in the fridge for 1 hour.
  5. Preheat the oven to 350 degrees.
  6. Drop by heaping tablespoon full onto an ungreased baking sheet about 2" apart and add a few extra chocolate chips to the top of each cookie.
  7. Bake for 12-14 minutes.
  8. Remove from the oven and let cool. Enjoy!
