Chopping up veggies the night before, starting the crock-pot early in the morning or cooking and freezing a meal for later are all time-saving options to help you get food on the table — fast. And throwing a crazy-yummy casserole together? Yeah — that’s on the list too!
I don’t know about you, but I am not happy about feeding my kids fast food several times a week. I feel so much better when my kids are eating a real meal that I know is nutritious, healthy and doesn’t contain hidden, foreign ingredients.
I also love to have my home-made meals wrapped in family traditions. I know I can’t go wrong with a bread-crumb topping like my grandmother often used in her recipes. I have fond memories of seeing a huge container of butter or margarine sitting in her fridge. She would always add this to her special dishes she made for our family. Southern-baked macaroni pie, seasoned green beans, and garden fresh creamed corn always had this yummy ingredient. And today? I still re-create those special recipes in my own kitchen. And yes, I use butter!
