“Easy chicken salad!” is often the response I get from family when I ask them what kind of sandwiches they want.
I honestly don’t mind making a batch or four because it’s that easy!
I grew up on grocery store chicken salad….but there’s no turning back now.
I tweaked and tweaked my chicken salad until I found the perfect blend of mayo, shredded chicken and all the extras.
I add quartered grapes for a touch of sweetness and freshly diced celery for an awesome crunch.
Oooh, did I mention this salad has walnuts?
And my fave way to serve chicken salad is on top of a heated, buttery croissant. you should definitely try it.

INGREDIENTS NEEDED FOR CHICKEN SALAD:
This needs to be shredded for the right texture.
1 cup celery
Dice up celery for the perfect size!
1 cup red grapes quartered
You can use black, seedless grapes as well.
1 cup walnuts chopped
Pecans is a great option as well.
1 1/2 cups mayo
Add more if desired.
1/2 teaspoons salt
This is based on your taste.
1/2 teaspoon black pepper
We prefer freshly ground.
1 tablespoon yellow mustard
Or try dijon.
1/2 teaspoon lemon juice
Freshly squeezed is best!

HOW TO MAKE CHICKEN SALAD BEFORE AN EVENT:
Make this salad the night before (add two additional drops of lemon juice to keep it bright) and keep it in the fridge until ready to serve.
You can make wraps, croissants, bagels, pinwheels or just plain sandwiches with them— easy-peasy!

Easy chicken salad recipe is below!
- 1 pound boiled chicken, shredded
- 1 cups celery, diced
- 1 cup red grapes, quartered
- 1 cup walnuts, chopped
- 1 1/2 cups mayo
- 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 tablespoon yellow mustard
- 1/2 teaspoon lemon juice
- Mix mayo, mustard and chicken in large bowl with a spoon.
- Add remaining ingredients and stir until all ingredients are thoroughly combined.
- Refrigerate one hour before serving.
