PIcture the oh-so-common scenerio. School is finally over, laundry is done, and you are exhausted — but what’s that rumbling in your tummy? Oh yes, you have to cook dinner — again! You’re exhausted and eating out is not a frugal-friendly option. That’s when an easy 15 minute meal comes in handy! Welcome one of the easiest , cheesiest meals of all time — Italian pasta skillet!
Confession: I totally made this on a whim one evening. My pantry and fridge was almost bare, but I had a few ingredients to make it until our next shopping trip. Without looking back, I whipped up this Italian pasta in my trusty, reliable skillet and prayed my husband would like it. No joke — I really did. I don’t know if it’s just me, but I am elated when my husband really likes a meal I cook, and I was so hoping he would love this new invention of mine (or concoction is what he calls it — wink, wink!)
After 15 minutes of cooking one of my now-favorite meals, I called my family to the dinner table and began adding heaping spoonfuls of ooey, gooey cheesiness on their plates.
“Mmmm…this looks good.” my oldest son commented.
I felt like I needed to add a disclosure.
“Just so you know, this does NOT taste like spaghetti or lasagna. It has a different flavor,” I announced without meeting my husband’s eyes.
Confused and quiet glances filled the dining room as everyone cautiously digged in.
“Mmm…what did you put in this?” my husband questioned.
Was that a good question?
“Pasta, Parmesan cheese, mozzerella cheese, Italian seasoning, salt, chicken seasoning and a can of tomato soup.” I hesitantly answered.

“Really? That’s it?” he asked with a puzzled look.
“Yep. It was ready in just 15 minutes.” I answered excitedly.
That’s why the kitchen is still so clean, I thought to myself.
“Well, you should definitely put this on your blog.” he said with a smile.
Ding! Ding! Woot! Yay! Excitement filled my heart, but I just played it cool and answered, “Hmm…maybe I will.”
So, there you have it! The story behind my original, easy, cheesy Italian skillet. Yes, it really does have tomato soup in it!

- 4 cups uncooked bow-tie pasta
- 1 14.5 oz can of condensed tomato soup
- 2 tablespoons Italian seasoning
- 1/8 teaspoon salt
- 1/8 teaspoon chicken seasoning (or chicken bouillon)
- 1 cup water
- 3/4 cup Parmesan cheese
- 2 cups mozzarella cheese, divided
- In large skillet, prepare pasta according to package directions. Drain and return to skillet.
- Stir in all ingredients, reserving 1 cup of mozzarella cheese for topping.
- Cook on medium-high heat until boiling and reduce heat and simmer on low for three minutes.
- Now, sprinkle remaining one cup of mozzarella cheese on top and cook on low until cheese is melted. Garnish with additional Parsley or Italian seasoning.
